Sap to syrup calculator
Use the Rule of 86 to estimate how much sap you need for a target amount of maple syrup.
Gallons of sap needed ≈ 86 ÷ Brix. At about 2° Brix that is roughly 40 gallons of sap per gallon of syrup (the familiar 40:1 rule of thumb). The same ratio applies in litres.
Example: At 2.0° Brix, one gallon of syrup needs about 43 gallons of sap (86 ÷ 2 = 43).
